Equipment

  • 1 Skillet or Pan Preferably non-stick or cast iron
  • 1 Mixing bowl For marinade
  • 1 Tongs For turning rolls while cooking
  • 1 Cutting Board For laying out and rolling beef
  • 1 Knife For trimming ingredients
  • 8–12 Toothpicks or Green Onion Strips To secure rolls

Ingredients
  

  • 1 pound Thinly sliced beef Ribeye or sirloin preferred
  • 2 packages Enoki mushrooms ~200g each bottom ends trimmed
  • 3 tbsp Soy sauce Use low-sodium for a healthier option
  • 2 tbsp Mirin
  • 1 tbsp Sake Substitute with dry white wine if needed
  • 2 tsp Sugar Substitute with honey or monk fruit for alternatives
  • 1 tbsp Sesame oil Adds flavor and richness
  • 2 cloves Garlic Minced
  • 1 tbsp Fresh ginger Grated
  • 2 Green onions Finely chopped
  • 1 tbsp Toasted sesame seeds For garnish
  • 1 tbsp Vegetable oil For pan-frying

Instructions
 

Prepare the beef and mushrooms:

  • Lay out beef slices on a cutting board and gently pound to about 1/8 inch thick. Separate enoki mushrooms into thumb-sized bundles.

Make the marinade:

  • In a bowl, whisk soy sauce, mirin, sake, sugar, sesame oil, garlic, and ginger until sugar dissolves. Reserve 3 tbsp of the marinade for glazing.

Marinate the beef:

  • Brush marinade onto beef slices and let sit for 10–15 minutes.

Roll the beef and mushrooms:

  • Place a mushroom bundle on one end of each beef slice and roll tightly. Secure with toothpick or green onion strip.

Cook the rolls:

  • Heat oil in a skillet over medium-high. Sear rolls seam-side down first. Cook 1–2 minutes per side, aiming for 135°F internal temp.

Glaze and garnish:

  • Add reserved marinade to the pan and coat rolls. Garnish with sesame seeds and green onions.
