Ingredients
  

  • 1 pound Cheese tortellini Fresh or frozen
  • 1 pound Lean ground beef 85–90% lean preferred
  • 1 Onion Medium finely diced
  • 3 cloves Garlic Minced
  • 1 can Diced tomatoes 14.5 oz with juice
  • 2 cups Beef or vegetable broth Low-sodium recommended
  • 1 tbsp Olive oil
  • 2 tbsp Italian seasoning
  • 1 cup Shredded mozzarella or parmesan Use more for extra cheesiness
  • Salt and pepper To taste
  • Fresh basil or parsley For garnish

Instructions
 

  • Sauté aromatics: In a large skillet or Dutch oven, heat olive oil over medium-high heat. Add diced onion and cook for 3 minutes. Stir in garlic and sauté for 30 seconds.
  • Brown the beef: Add ground beef. Season with salt, pepper, and half the Italian seasoning. Cook until browned, breaking it apart (about 5–7 minutes). Drain excess fat if needed.
  • Simmer the sauce: Add diced tomatoes with juices, broth, and remaining Italian seasoning. Stir and bring to a simmer. Let reduce for 5 minutes.
  • Add tortellini: Stir in tortellini. Cook uncovered until tortellini is tender—about 3–4 minutes if fresh, 5–7 minutes if frozen. Stir occasionally.
  • Melt cheese: Sprinkle shredded cheese on top. Cover and remove from heat. Let sit for 2 minutes until cheese is melted.
  • Garnish and serve: Sprinkle with chopped basil or parsley and serve hot.
